Pickle Juice Vinaigrette

Here is a kitchen hack for a delicious and gut healthy salad dressing.

Gut health is key to overall health, and we now know that healthy microflora keeps us healthy. Fermented foods like pickles and sauerkraut are good for us because they have beneficial bacteria called probiotics. I like to use pickle juice to make this delicious and zesty salad dressing, and that way I get more mileage out of a jar of pickles. It tastes great on salads topped with avocado. Just be sure to use refrigerated pickles or sauerkraut, not the ones on the shelve in the middle of the store those are not fermented and do not contain probiotics.

Save a pretty jar from olives or artichokes and use it to make your own healthy salad dressings.

Ingredients
1/3 cup of pickle juice
1/4 cup (or 4 tablespoons) extra virgin olive oil
1 tablespoon mustard
A dash of maple syrup
Salt and pepper to taste
Dry herbs like thyme or oregano
Fresh dill or parsley, finely chopped (optional)

Directions
Combine all the ingredients in a jar and shake really well to emulsify. Can be stored in the fridge for a week or so (but it will be gone well before then!)
